Creamy Alfredo Lasagna Soup

 

Turn the comforting flavors of classic lasagna into a rich, creamy soup! This Alfredo-inspired twist is loaded with lasagna noodles, savory meat, and cheesy goodness—perfect for cozy nights.

Ingredients
For the Soup Base:

1 tablespoon olive oil
1 pound Italian sausage (mild or spicy), casings removed
1 small onion, diced
4 garlic cloves, minced
4 cups chicken broth
2 cups heavy cream
1 (14 oz) can diced tomatoes, undrained
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon crushed red pepper flakes (optional)
Salt and pepper, to taste
For the Pasta:

8 lasagna noodles, broken into bite-sized pieces (or use bowtie pasta)
For the Cheese Mixture:

1 cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning
For Garnish:

¼ cup fresh parsley, chopped
Extra Parmesan cheese
Instructions
1. Cook the Sausage:

Heat olive oil in a large pot over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles with a spoon. Remove the sausage and set it aside, leaving the drippings in the pot.
2. Sauté Aromatics:

Add diced onions to the pot and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
3. Build the Soup Base:

Pour in the chicken broth, heavy cream, and canned diced tomatoes. Add dried basil, oregano, and red pepper flakes (if using). Bring the mixture to a gentle boil.
4. Cook the Pasta:

Stir in the broken lasagna noodles and reduce the heat to a simmer. Cook until the pasta is tender, about 10-12 minutes.
5. Make the Cheese Mixture:

In a small bowl, combine ricotta cheese, mozzarella, Parmesan, and Italian seasoning. Mix well and set aside.
6. Combine and Serve:

Stir the cooked sausage back into the pot. Taste and adjust seasonings with salt and pepper.
7. Garnish:

Ladle the soup into bowls. Add a dollop of the cheese mixture on top of each serving and let it melt slightly. Garnish with fresh parsley and extra Parmesan cheese.
