Crack Breakfast Casserole

Ingredients
1 pound breakfast sausage (bulk, not in casings)
1 small onion, diced
1 bell pepper, diced
1 (26-ounce) bag frozen hashbrowns (thawed)
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
8 large eggs
1 cup milk
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon paprika (optional)
Fresh parsley for garnish (optional)
Instructions
1. Cook the Sausage:
Preheat your oven to 375°F (190°C).
In a large skillet, cook the breakfast sausage over medium heat, breaking it up with a spoon as it cooks. Once fully browned, drain the excess fat.
Add the diced onion and bell pepper to the skillet and cook for 3–4 minutes, until softened. Set aside.
2. Prepare the Casserole:
In a large mixing bowl, combine the thawed hashbrowns, cooked sausage mixture, cheddar cheese, and mozzarella cheese.
In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, pepper, and paprika. Pour this egg mixture over the hashbrown and sausage mixture and stir everything together until evenly combined.
3. Assemble and Bake:
Lightly grease a 9×13-inch baking dish with non-stick spray or butter.
Pour the breakfast casserole mixture into the prepared dish and spread it out evenly.
Bake for 35–40 minutes, or until the casserole is golden and set in the middle. You can check by inserting a toothpick – it should come out clean when done.
4. Garnish and Serve:
Let the casserole cool for a few minutes before serving. Garnish with chopped fresh parsley if desired.
