Cowboy Butter Chicken Skewers
Use Cowboy butter for all kinds, mushrooms, steak, or roasted asparagus 😋
Ingredients:
▪️8 wooden skewers, soaked in water for 30 minutes
▪️2 boneless skinless chicken breasts (about 1 pound), cut into 1-inch cubes
▪️1 tablespoon extra virgin olive oil
▪️1 teaspoon kosher salt
▪️½ teaspoon black pepper
▪️½ cup cowboy butter, melted
▪️fresh parsley, chopped for garnish
Cowboy Butter:
▪️½ cup (1 stick / 113 g) unsalted butter, softened
▪️1 tablespoon coarse Dijon Mustard
▪️1 tablespoon fresh chives, chopped
▪️1 tablespoon fresh parsley, chopped
▪️2 teaspoons fresh thyme,
▪️2 teaspoons garlic, minced
▪️1 teaspoon lemon juice
▪️½ teaspoon paprika
▪️¼ teaspoon kosher salt
▪️⅛ teaspoon pepper
▪️⅛ teaspoon cayenne pepper
▪️⅛ teaspoon crushed red pepper flakes
Instructions:
To a large bowl, add chicken, oil, salt, and pepper. Toss to coat.
Working one skewer at a time, thread 4-5 chicken cubes onto the soaked wooden skewers, leaving a little space between each piece.
Air fry* at 400°F for 11-12 minutes, flipping halfway, or until the chicken has reached an internal temperature of 165°F.
Once the chicken skewers are cooked through, carefully remove them from the air fryer and place them on a serving platter.
Drizzle or brush with the melted cowboy butter. Garnish with parsley
