Chocolate Banana Split Cupcakes
Ingredients:
For the Cupcakes:
– 1 1/2 cups all-purpose flour
– 1/2 cup cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1/2 cup light brown sugar, packed
– 2 large eggs
– 1 teaspoon vanilla extract
– 1/2 cup buttermilk
– 1/2 cup mashed ripe bananas
For the Toppings:
– 1/2 cup chopped strawberries
– 1/2 cup pineapple tidbits, drained
– 1/4 cup chocolate syrup
– 12 maraschino cherries
For the Frosting:
– 1/2 cup unsalted butter, softened
– 1 3/4 cups powdered sugar
– 1/3 cup cocoa powder
– 2–3 tablespoons milk
– 1 teaspoon vanilla extract
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
2. Make the Cupcake Batter:
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and mashed bananas. Alternate adding the dry ingredients and buttermilk, starting and ending with the dry ingredients. Mix until just combined.
3. Bake the Cupcakes:
Divide the batter evenly among the cupcake liners. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Cool completely on a wire rack.
4. Make the Frosting:
In a bowl, beat the butter until creamy. Add the powdered sugar, cocoa powder, vanilla extract, and milk, beating until smooth and fluffy. Adjust consistency with more milk if needed.
5. Assemble the Cupcakes:
Frost each cooled cupcake with the chocolate frosting. Top with a drizzle of chocolate syrup, a few pieces of chopped strawberries and pineapple, and a maraschino cherry on top.
6. Serve and Enjoy:
These cupcakes are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 3 days.
Preparation Time: 25 minutes

◻️ For an extra indulgent touch, add a sprinkle of chopped nuts or mini chocolate chips on top.
