Chicken with Pesto Sauce

Ingredients
For the Chicken:
2 chicken breasts (boneless, skinless)
1 tablespoon olive oil
Salt and black pepper, to taste
1/2 teaspoon garlic powder (optional)
For the Pesto Sauce:
1/2 cup fresh basil leaves
1/4 cup Parmesan cheese, grated
1/4 cup pine nuts (or walnuts)
2 garlic cloves
1/2 cup extra virgin olive oil
Salt and pepper, to taste
Instructions
Prepare the Pesto Sauce:
In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic.
Pulse a few times until everything is finely chopped.
With the food processor running, slowly stream in the olive oil until the pesto becomes smooth and creamy.
Season with salt and pepper to taste, and set aside.
Cook the Chicken:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Season the chicken breasts with salt, pepper, and garlic powder (if using).
Add the chicken to the skillet and cook for 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature of 165°F or 75°C).
Serve:
Once the chicken is cooked, remove it from the skillet and set it on a plate.
Spoon the fresh pesto sauce over the chicken and serve immediately.
