Chicken Avocado Melt Sandwich

2 boneless skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 avocado, sliced
4 slices cheese (Swiss, cheddar, or provolone)
4 slices bread (sourdough, ciabatta, or your choice)
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 small red onion, thinly sliced
1 tomato, sliced
Butter or olive oil for grilling
Directions:
1. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-7 minutes per side until cooked through. Let it rest, then slice thinly.
2. Slice the avocado and prepare cheese slices.
3. Spread mayonnaise and Dijon mustard on each slice of bread.
4. On two slices of bread, layer sliced chicken, avocado, cheese, onion, and tomato. Top with the other bread slices.
5. Heat a skillet over medium heat, adding butter or oil. Grill the sandwiches for 3-4 minutes per side until golden and the cheese melts.
6. Let the sandwiches cool slightly, then slice and serve.
