Cheesy Stuffed Potato Rounds

 

Ingredients:

4 large potatoes 🥔

1 cup shredded mozzarella or cheddar cheese 🧀

1/2 cup sour cream 🥄

2 tablespoons butter, melted 🧈

2 tablespoons fresh chives, chopped 🌿

Salt and pepper to taste 🧂

1/4 teaspoon garlic powder 🧄

Instructions:

1️⃣ Prepare the Potatoes:

1. Preheat your oven to 375°F (190°C).

2. Slice the potatoes into thick rounds (about 1 inch thick) and scoop out a small cavity in the center of each slice.

3. Brush both sides with melted butter and season with salt, pepper, and garlic powder 🧂🧄.

2️⃣ Bake the Potatoes:

1. Arrange the potato rounds on a baking sheet lined with parchment paper.

2. Bake for 20 minutes, flip them, and bake for another 15 minutes until golden and tender.

3️⃣ Add the Cheese:

1. Sprinkle shredded cheese into the cavity of each potato round 🧀.

2. Return to the oven for 5-7 minutes until the cheese melts and turns bubbly.

4️⃣ Finish and Serve:

1. Top each potato round with a dollop of sour cream and sprinkle with fresh chives 🌿.

2. Serve warm as a side dish or appetizer.

Tips:

For extra flavor, add crumbled bacon or diced jalapeños 🌶️.

Pair with a tangy dipping sauce for a fun twist.
