Caramel-Pecan Delight Cupcakes

 

Ingredients:
– 1 cup chopped pecans
– 1 cup granulated sugar
– 1/2 cup unsalted butter, softened
– 2 large eggs
– 1 cup all-purpose flour
– 1 tsp vanilla extract
– 1/2 tsp baking powder
– 1/4 tsp salt
– 1/2 cup caramel sauce

Instructions:
1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.

2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking powder, and salt.

5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.

6. Fold in the chopped pecans, reserving a handful for topping.

7. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.

8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

9. Allow cupcakes to cool, then drizzle caramel sauce over the top and sprinkle with reserved pecans for a delicious finish.
