Blackberry Thyme Baked Brie En Croute

 

Ingredients:

For the baked brie:
– 1 sheet puff pastry, thawed
– 1 wheel of brie (8 oz/225 g)
– 1/3 cup blackberry jam
– 1 teaspoon fresh thyme leaves
– 1 egg, beaten (for egg wash)

For garnish:
– Fresh blackberries
– Additional thyme sprigs

Directions:

1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Roll out the puff pastry slightly on a lightly floured surface. Place the wheel of brie in the center.
3. Spread blackberry jam evenly over the top of the brie and sprinkle with fresh thyme leaves.
4. Fold the puff pastry around the brie, trimming any excess dough, and press to seal the edges. Turn the wrapped brie seam-side down onto the prepared baking sheet.
5. Brush the pastry with beaten egg to ensure a golden, glossy finish.
6. Bake for 20-25 minutes or until the puff pastry is golden brown and crispy.
7. Let the baked brie rest for 5-10 minutes before serving. Garnish with fresh blackberries and thyme sprigs.
