Beef and Seared Sea Bass in Zesty Garlic Sauce

Ingredients
For the Beef and Sea Bass:

2 beef filets (8 oz each)
2 sea bass fillets (6-8 oz each)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 tablespoon fresh parsley, chopped (for garnish)
For the Zesty Garlic Sauce:

4 cloves garlic, minced
1/2 cup white wine
1/4 cup lemon juice (freshly squeezed)
1/2 cup heavy cream
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
2 tablespoons unsalted butter
Salt and freshly ground black pepper, to taste
Instructions
1. Cook the Beef:

Season the beef filets with salt, pepper, garlic powder, and smoked paprika on both sides.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the beef filets to the skillet and sear for 4-5 minutes per side for medium-rare, or longer for your preferred doneness.
Once cooked, remove the beef from the skillet and let it rest while you cook the sea bass.
2. Cook the Sea Bass:

Season the sea bass fillets with salt and pepper.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the sea bass fillets to the skillet, searing them for 3-4 minutes per side until the fish is golden and flakes easily with a fork. Remove the fish from the skillet and set aside.
3. Prepare the Zesty Garlic Sauce:

In the same skillet, reduce the heat to medium and add the minced garlic, sautéing it until fragrant (about 1 minute).
Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the pan.
Let the wine reduce for 2-3 minutes, then stir in the heavy cream and Dijon mustard.
Cook the sauce for 3-4 minutes until it thickens slightly.
Add the fresh thyme, butter, and adjust the seasoning with salt and pepper. Stir until the sauce is creamy and smooth.
4. Combine and Serve:

Place the beef and sea bass fillets on serving plates.
Spoon the zesty garlic sauce generously over both the beef and the fish.
Garnish with fresh parsley and serve immediately.
