Barbecue Chicken Skewers

Ingredients:
• 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces 🍗
• 1/4 cup barbecue sauce 🍖
• 2 tablespoons olive oil 🫒
• 2 tablespoons honey 🍯
• 1 tablespoon soy sauce (or tamari for gluten-free) 🍶
• 1 teaspoon smoked paprika 🌶️
• 1/2 teaspoon garlic powder 🧄
• 1/4 teaspoon black pepper 🌿
• 1/2 teaspoon salt 🧂
• Wooden skewers (soaked in water for 30 minutes)
Directions:
1. In a medium bowl, whisk together barbecue sauce, olive oil, honey, soy sauce, smoked paprika, garlic powder, black pepper, and salt.
2. Add chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 4 hours for maximum flavor.
3. Preheat the grill to medium-high heat and lightly oil the grates.
4. Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece.
5. Grill skewers for 8-10 minutes, turning occasionally, until the chicken is cooked through and has grill marks. Brush with extra barbecue sauce during the last 2 minutes of cooking for added flavor.
6. Remove skewers from the grill and let rest for 5 minutes before serving.
