Almond Joy Coconut Bites

 

Ingredients

For the Coconut Mixture:
2 cups sweetened shredded coconut
1/2 cup sweetened condensed milk
1 tsp vanilla extract
Pinch of salt

For the Filling:
24 whole almonds (or more depending on the size of your bites)

For the Coating:
1 cup semi-sweet or dark chocolate chips
1 tbsp coconut oil (optional, for smoother coating)

Instructions

1. Prepare the Coconut Mixture:
In a mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and a pinch of salt. Mix until fully combined and sticky.

2. Shape the Bites:
Scoop about 1 tablespoon of the coconut mixture and roll it into a ball or flatten it into a small rectangular shape (to mimic the Almond Joy shape).
Press one almond into the center of each bite and reshape as needed to cover the almond. Repeat until all the mixture is used.

3. Chill the Bites:
Place the shaped coconut bites on a parchment-lined baking sheet.
Refrigerate for 30 minutes or freeze for 15 minutes until firm.

4. Melt the Chocolate:
In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second increments, stirring after each, until smooth and fully melted.

5. Coat the Bites:
Use a fork or a toothpick to dip each coconut bite into the melted chocolate, ensuring it’s fully coated.
Allow excess chocolate to drip off before placing the coated bites back onto the parchment-lined baking sheet.

6. Set the Chocolate:
Let the bites set at room temperature or place them in the refrigerator until the chocolate hardens.

Optional Variations:
Double the Almond Joy Flavor: Use almond extract instead of vanilla extract for a nuttier taste.

Drizzle: After coating, drizzle with white chocolate for a decorative touch.

Mini Bites: Make smaller, bite-sized pieces for snacking.

Storage:
Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months. Enjoy chilled or at room temperature!
