Cowboy Steak with Herb Butter

Ingredients

1 cowboy ribeye steak (bone-in, 2–2.5 pounds, about 2 inches thick) 🥩
2 tablespoons olive oil 🫒
1 teaspoon kosher salt 🧂
1/2 teaspoon black pepper 🧂
1 teaspoon smoked paprika 🌶️
1 teaspoon garlic powder 🧄
1 teaspoon dried thyme 🌿
4 tablespoons unsalted butter, softened 🧈
1 tablespoon fresh parsley, chopped 🌿
1 teaspoon fresh rosemary, chopped 🌿
1 garlic clove, minced 🧄

Directions

Step 1: Prepare the Steak
Remove the steak from the refrigerator and let it come to room temperature for 30–45 minutes. Pat it dry with paper towels to ensure a good sear.

Step 2: Season the Steak
In a small bowl, mix together kosher salt, black pepper, smoked paprika, garlic powder, and dried thyme. Rub the steak with olive oil and generously coat both sides with the seasoning blend.

Step 3: Preheat the Grill or Skillet

For Grill: Preheat your grill to high heat (450–500°F).
For Skillet: Heat a cast-iron skillet over high heat until very hot.
Step 4: Sear and Cook the Steak

On the Grill: Sear the steak over direct heat for 2–3 minutes per side to develop a crust. Move the steak to indirect heat, cover, and cook for an additional 8–12 minutes, or until the internal temperature reaches your desired doneness (see temperature guide below).
In the Skillet: Sear the steak for 2–3 minutes per side, then transfer the skillet to a 375°F (190°C) oven and cook for 8–12 minutes.
Step 5: Make the Herb Butter
In a small bowl, mix the softened butter with fresh parsley, rosemary, and minced garlic. Set aside.

Step 6: Rest and Serve
Remove the steak from the heat and let it rest for 10 minutes, loosely tented with foil. Slice against the grain and serve with dollops of herb butter and lemon wedges on the side.

Rare: 125°F (cool red center)
Medium Rare: 135°F (warm red center)
Medium: 145°F (warm pink center)
Medium Well: 150°F (slightly pink center)
Well Done: 160°F (no pink)
