Mixed Grilled Seafood Platter with Garlic Herb Butter

Ingredients
For the Seafood:

1 lb (450 g) large shrimp, peeled and deveined 🦐
1 lb (450 g) squid, cleaned and sliced into rings 🦑
2 salmon fillets (6 oz each), skin on 🐟
4 scallops, patted dry
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Garlic Herb Butter:

4 tablespoons unsalted butter, melted 🧈
2 garlic cloves, minced 🧄
2 tablespoons fresh parsley, chopped 🌿
1 teaspoon lemon juice 🍋
Optional Garnishes:

Lemon wedges 🍋
Fresh dill 🌿
Directions
1. Prepare the Seafood:

In a large bowl, combine shrimp, squid, salmon fillets, and scallops.
Drizzle olive oil over the seafood and season with smoked paprika, garlic powder, salt, and black pepper. Toss gently to coat evenly.
2. Preheat the Grill:

Heat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
3. Grill the Seafood:

Shrimp and Squid: Grill for 2–3 minutes per side, until the shrimp turn pink and the squid rings are lightly charred.
Salmon: Place skin-side down and grill for 4–5 minutes per side, or until the flesh flakes easily with a fork.
Scallops: Sear for 2–3 minutes per side until golden and opaque.
4. Make the Garlic Herb Butter:

In a small bowl, mix melted butter, minced garlic, parsley, and lemon juice. Stir well.
5. Assemble the Platter:

Arrange the grilled seafood on a large platter. Drizzle the garlic herb butter over the top.
Garnish with lemon wedges and fresh dill for a burst of freshness.
Tips for Perfect Grilling:
Use a seafood grilling basket to prevent smaller items from falling through the grates.
Pat all seafood dry before grilling to ensure a good sear.
Serve immediately for the best flavor and texture.
