Sweet & Savory Cranberry Dijon Pork Loin

Ingredients:
– 2 pounds pork loin
– 1 cup fresh or frozen cranberries
– 1/4 cup Dijon mustard
– 1/2 cup brown sugar
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1/2 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup chicken broth or water
– Fresh herbs for garnish (optional)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the Dijon mustard, brown sugar, garlic powder, salt, and pepper until well combined.
3. Rub the mixture all over the pork loin, making sure to coat it thoroughly for maximum flavor.
4. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the pork loin for 3-4 minutes on each side until browned all over.
5. Add cranberries and chicken broth (or water) to the skillet around the pork loin, allowing the flavors to meld.
6. Transfer the skillet to the preheated oven and roast for 25-30 minutes or until the internal temperature of the pork reaches 145°F (63°C).
7. Once cooked, let the pork loin rest for about 10 minutes before slicing. This helps retain the juices for a tender end product.
8. Serve warm with the cranberries spooned over the top. Garnish with fresh herbs if desired!
