Leftover Mashed Potato Pancakes

 

Ingredients:
• 2 cups leftover mashed potatoes
• 1 large egg
• 1/4 cup all-purpose flour
• 1/4 cup grated Parmesan cheese
• 2 tablespoons green onions, finely chopped
• Salt and pepper to taste
• 2 tablespoons unsalted butter (or oil, for frying)
Directions:
1. In a large mixing bowl, combine the mashed potatoes, egg, flour, Parmesan cheese, and green onions. Season with salt and pepper, and mix until well combined.
2. Shape the mixture into small patties, about 3 inches wide.
3. Heat a large skillet over medium heat and add the butter (or oil).
4. Place the potato patties in the skillet, making sure not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy.
5. Remove the pancakes from the skillet and place them on a paper towel-lined plate to drain excess grease.
6. Serve warm, garnished with additional green onions or sour cream, if desired.
