Tater Tot Breakfast Bowl with Sausage Gravy

 

Ingredients:
– 1 pound breakfast sausage
– 2 cups frozen tater tots
– 1 cup milk
– 1/4 cup all-purpose flour
– 4 large eggs
– Salt and pepper to taste
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 tablespoon butter
– Chopped green onions (for garnish)

Instructions:
1. Preheat your oven to 425°F (220°C). Spread the tater tots on a baking sheet and bake according to package instructions until golden and crispy. This usually takes about 25 minutes.

2. While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook until browned and cooked through, breaking it up into small pieces with a spatula.

3. Once the sausage is nicely browned, stir in the flour, garlic powder, and onion powder, cooking for an additional 2 minutes to create a roux.

4. Gradually pour in the milk, stirring continuously until the gravy thickens. This usually takes about 5 to 7 minutes. Season with salt and pepper to taste.

5. In a separate pan, melt the butter over medium heat. Crack the eggs into the pan and cook sunny side up or to your desired doneness.

6. Assemble the bowls: Start with a layer of crispy tater tots, top with the savory sausage gravy, and finish with a perfectly cooked egg.

7. Garnish with chopped green onions for that extra zing.
