Quick Shrimp and Egg Delight

 

Ingredients:
– 4 large eggs
– 1 cup shrimp, peeled and deveined
– 1 tablespoon olive oil
– 1/4 cup diced bell peppers
– 1/4 cup chopped green onions
– Salt and pepper to taste
– 1 teaspoon garlic powder

Instructions:
1. In a bowl, beat the eggs with a pinch of salt and pepper until well mixed.
2. Heat the olive oil in a non-stick skillet over medium heat.
3. Add the diced bell peppers and sauté for about 2-3 minutes until they begin to soften.
4. Toss in the shrimp and garlic powder, stirring well. Cook for 3-4 minutes until the shrimp turn pink and are cooked through.
5. Pour the beaten eggs into the skillet, and gently stir to combine with the shrimp and peppers.
6. Continue to cook for 3-4 minutes, or until the eggs are fully set.
7. Sprinkle with chopped green onions before serving for an extra pop of flavor.
