Grilled Lamb with Brown Sugar Glaze

Ingredients:
8 lamb chops or 1 rack of lamb (cut into chops)
2 tbsp olive oil
Salt and freshly ground black pepper
1/4 cup brown sugar
2 tbsp soy sauce
2 tbsp balsamic vinegar
1 tbsp Dijon mustard
3 garlic cloves, minced
1 tsp rosemary, chopped (optional)

Season the Lamb:
Rub lamb chops with olive oil, salt, and black pepper. Let them rest while you prepare the glaze.
Make the Glaze:
In a small saucepan, combine brown sugar, soy sauce, balsamic vinegar, Dijon mustard, garlic, and rosemary. Simmer over low heat for 3-4 minutes until the mixture thickens slightly.
Grill the Lamb:
Preheat your grill to medium-high heat. Grill lamb chops for 3-4 minutes per side for medium-rare or longer to your desired doneness. Brush the glaze onto the lamb during the last 1-2 minutes of grilling.
Rest the Lamb:
Remove lamb from the grill and let it rest for 5 minutes.
Serve:
Drizzle any remaining glaze over the lamb and garnish with fresh rosemary if desired
