Exclusive Grilled Lamb Kofta Skewers

Ingredients (Serves 4–6)
For the Kofta:
1 lb (450 g) ground lamb
1 small onion, finely grated
2 garlic cloves, minced
2 tablespoons fresh parsley, chopped 🌿
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
For the Yogurt Sauce:
1 cup plain Greek yogurt
1 tablespoon lemon juice 🍋
1 garlic clove, minced
1 tablespoon fresh mint, chopped
Salt and black pepper to taste
For Garnish:
Fresh parsley or mint leaves 🌿

Instructions
Prepare the Kofta Mixture:
In a large bowl, combine ground lamb, grated onion, garlic, parsley, cumin, coriander, smoked paprika, cayenne (if using), salt, and black pepper. Mix well until fully combined.
Shape the Kofta:
Divide the mixture into equal portions and shape each into long, oval patties or around skewers for an authentic touch. Place the kofta in the fridge for 15–20 minutes to firm up.
Preheat the Grill:
Heat the grill to medium-high and lightly oil the grates to prevent sticking.
Grill the Kofta:
Place the kofta on the grill and cook for 3–4 minutes per side, or until fully cooked and nicely charred on the outside.
Prepare the Yogurt Sauce:
In a small bowl, whisk together yogurt, lemon juice, garlic, mint, salt, and black pepper. Set aside.
Serve:
Arrange the kofta skewers on a platter. Garnish with fresh parsley or mint and serve with the yogurt sauce and lemon wedges.
Tips for the Best Kofta
Use cold lamb to make it easier to shape the skewers.
For an extra smoky flavor, add a pinch of cinnamon or nutmeg to the kofta mixture.
Pair with warm pita bread and a side of grilled vegetables for a complete meal.
