Grilled Beet Steaks with Herb Garlic Butter

Ingredients (Serves 4)
For the Beet Steaks:
4 large beets, peeled and sliced into 1-inch thick rounds
2 tablespoons olive oil
Salt and black pepper to taste
For the Herb Garlic Butter:
1/4 cup unsalted butter, softened ๐ง
2 garlic cloves, minced
1 tablespoon fresh parsley, chopped ๐ฟ
1 teaspoon fresh thyme leaves
1/2 teaspoon lemon zest ๐
Pinch of salt
For Garnish:
Crumbled goat cheese or feta (optional)
Fresh microgreens or arugula
Instructions
Prepare the Beets:
Toss the beet slices with olive oil, salt, and pepper. Let them rest for 5โ10 minutes to absorb the seasoning.
Make the Herb Garlic Butter:
In a small bowl, mix softened butter, minced garlic, parsley, thyme, lemon zest, and a pinch of salt until well combined. Set aside.
Preheat the Grill:
Heat your grill to medium-high and lightly oil the grates to prevent sticking.
Grill the Beets:
Place the beet slices on the grill and cook for 4โ5 minutes per side, or until grill marks appear and the beets are tender. Adjust the cooking time based on the size and thickness of the beets.
Assemble and Serve:
Transfer the grilled beet steaks to a platter. While theyโre still warm, spread a dollop of herb garlic butter over each slice, allowing it to melt and enhance the flavor.
Optional: Top with crumbled goat cheese or feta and garnish with fresh microgreens or arugula.
Tips for the Best Beet Steaks
Select firm, fresh beets for the best texture and flavor.
Pre-boil the beets for 10 minutes before grilling if you prefer a softer texture.
For a vegan option, substitute the butter with olive oil and mix the herbs directly with the oil.
Serving Suggestions
Serve these beet steaks as a stunning vegetarian centerpiece with a side of quinoa salad or roasted nuts. They also pair wonderfully with grilled fish or chicken for a well-rounded meal.
