Bang Bang Chicken

Ingredients
For the Chicken:
500g (1 lb) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
1 cup all-purpose flour
1 cup cornstarch
2 large eggs, beaten
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt and pepper to taste
Vegetable oil for frying
For the Bang Bang Sauce:
1/3 cup mayonnaise
1/4 cup sweet chili sauce
2 tbsp sriracha (adjust to your spice preference)
1 tbsp honey (optional, for extra sweetness)
1 tsp rice vinegar or lemon juice (optional, for tang)
Garnish:
Chopped green onions
Sesame seeds
Instructions
1. Prepare the Chicken:
In a medium bowl, mix the flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
Place the beaten eggs in a separate bowl.
Coat each piece of chicken in the flour mixture, dip in the egg, and then coat again in the flour mixture. Set aside.
2. Fry the Chicken:
Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 175°C (350°F).
Fry the chicken pieces in batches until golden brown and crispy, about 4–5 minutes per batch.
Remove and drain on a paper towel-lined plate.
3. Make the Sauce:
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
4. Assemble:
In a large mixing bowl, toss the fried chicken with the prepared Bang Bang sauce until evenly coated.
Transfer to a serving dish.
5. Garnish and Serve:
Sprinkle with chopped green onions and sesame seeds. Serve immediately as an appetizer or with rice or noodles for a main dish.
