For the Skewers:
1 lb (450 g) large shrimp, peeled and deveined, tails on
2 bell peppers (red, yellow, or green), diced
1 red onion, diced
Wooden or metal skewers (soak wooden skewers in water for 30 minutes if using)
For Garnish:
Fresh cilantro, chopped πΏ
Lime wedges
Instructions
Prepare the Marinade:
In a bowl, whisk together honey, soy sauce, olive oil, garlic, ginger, red chili flakes (if using), and lime juice.
Marinate the Shrimp:
Place the shrimp in a large resealable bag or shallow dish. Pour half of the marinade over the shrimp, reserving the other half for basting.
Marinate the shrimp in the refrigerator for 15β20 minutes.
Prepare the Skewers:
Thread the marinated shrimp onto skewers, alternating with bell pepper and onion pieces.
Preheat the Grill:
Heat your grill to medium-high heat and lightly oil the grates to prevent sticking.
Grill the Skewers:
Place the skewers on the grill and cook for 2β3 minutes per side, brushing with the reserved marinade as they cook. The shrimp should turn pink and opaque.
Serve:
Transfer the skewers to a serving platter, garnish with fresh cilantro, and serve with lime wedges for a burst of freshness.
Tips for Perfect Skewers
Donβt overcook the shrimp; they cook quickly and can become rubbery if left too long on the grill.
Pair with a side of grilled corn or a fresh cucumber salad for a complete meal.
