Grilled Lamb Chops with Garlic Herb Marinade

Ingredients (Serves 4)
For the Marinade:
1/4 cup olive oil
3 garlic cloves, minced
2 tablespoons fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon Dijon mustard
1 teaspoon lemon zest
1 teaspoon salt
1/2 teaspoon black pepper
For the Lamb Chops:
8 lamb chops (about 1-inch thick)
Fresh rosemary sprigs for garnish
Instructions
Prepare the Marinade:

In a bowl, whisk together olive oil, garlic, rosemary, thyme, parsley, Dijon mustard, lemon zest, salt, and black pepper.
Marinate the Lamb Chops:

Place the lamb chops in a shallow dish or a large zip-top bag. Pour the marinade over the chops, ensuring they are evenly coated. Cover and refrigerate for at least 1 hour (or up to 8 hours for deeper flavor).
Preheat the Grill:

Heat your grill to medium-high heat. Oil the grates to prevent sticking.
Grill the Lamb Chops:

Remove the lamb chops from the marinade and shake off any excess.
Grill the chops for 3–4 minutes per side for medium-rare, or adjust the time to your desired doneness. Use a meat thermometer to check the internal temperature (125°F for medium-rare, 135°F for medium).
Rest the Lamb:

Transfer the lamb chops to a plate and let them rest for 5 minutes before serving to retain their juices.
Serve:

Arrange the lamb chops on a serving platter, garnish with fresh rosemary sprigs, and serve with your favorite sides, such as grilled vegetables or a fresh salad.
Tips for Perfect Lamb Chops
Bring the lamb to room temperature before grilling for even cooking.
