Reuben Sandwich

Ingredients:
8 slices rye bread
1/2 cup Thousand Island dressing
8 slices Swiss cheese
8 slices cooked beef pastrami (or turkey pastrami)
1 cup sauerkraut, drained
2 tablespoons butter, softened
Directions:
Spread a thin layer of Thousand Island dressing on one side of each slice of bread.
On 4 slices of bread, layer a slice of Swiss cheese, 2 slices of pastrami, a quarter cup of sauerkraut, and another slice of Swiss cheese.
Top each sandwich with the remaining slices of bread, dressing side down.
Butter the outside of each sandwich on both sides.
Heat a large skillet or griddle over medium heat. Place the sandwiches on the skillet and cook for 3-4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
Remove from heat, slice in half, and serve warm.
