Divine Raspberry Chocolate Mousse Cake

 

Ingredients:
– 9 ounces dark chocolate, chopped
– 1 cup heavy cream, divided
– 1 teaspoon vanilla extract
– 2 large eggs, separated
– 1 cup fresh raspberries, plus extra for garnish
– 4 tablespoons sugar
– 1 pinch of salt
– 1 tablespoon cocoa powder for dusting (optional)

Instructions:
1. Start by melting the dark chocolate. Place it in a heatproof bowl over simmering water, stirring gently until smooth. Remove from heat and let it cool slightly.

2. In a separate bowl, whip half of the heavy cream until soft peaks form. Add in the vanilla extract and gently fold it into the cooled chocolate mixture.

3. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gradually add the sugar, continuing to beat until glossy and thick.

4. Gently fold the egg whites into the chocolate mixture in thirds. Be careful not to deflate the mixture.

5. In a blender or food processor, puree the raspberries until smooth. You can strain the puree to remove seeds if desired.

6. Divide the raspberry puree into the chocolate mixture and fold it in gently.

7. Spoon the mousse into your desired serving dish or individual cups. Cover and refrigerate for at least 2-3 hours or until set.

8. Once ready to serve, whip the remaining heavy cream and dollop it on top of the mousse. Garnish with fresh raspberries and a dusting of cocoa powder if using.
