Apple Fritter Bites

Ingredients:
– 2 medium apples (preferably Granny Smith), peeled and diced
– 1/2 cup all-purpose flour
– 1/2 cup whole wheat flour
– 1/4 cup granulated sugar
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1/4 teaspoon salt
– 1/2 cup milk
– 1 large egg
– 1 teaspoon vanilla extract
– Oil for frying (canola or vegetable)
– Extra granulated sugar for coating
– Optional: powdered sugar for garnish
Instructions:
1. Prepare the Apples: In a bowl, mix the diced apples with 1 tablespoon of granulated sugar and let them sit for about 10 minutes. This will help them release some moisture and enhance their flavor.
2. Make the Batter: In a large bowl, combine both flours, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples until evenly incorporated.
3. Heat the Oil: In a deep skillet or pot, pour in enough oil to fry (about 2-3 inches deep) and heat it over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
4. Fry the Bites: Once the oil is hot, drop spoonfuls of the batter (about a tablespoon) into the oil. Do not overcrowd the pan; work in batches. Fry for about 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove them and let them drain on paper towels.
5. Coat with Sugar: While the fritter bites are still warm, toss them in a bowl with extra granulated sugar for coating. If desired, dust with powdered sugar for an added touch.
6. Serve: Enjoy your Apple Fritter Bites warm as a delightful snack or dessert. They pair perfectly with a scoop of vanilla ice cream or a drizzle of caramel sauce.
