Salmon with Spinach Tortellini: A Match Made in Heaven!

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬
For the Salmon:

2 salmon fillets (about 6 oz each)
1 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper to taste
For the Spinach Tortellini:

9 oz (1 package) cheese tortellini (fresh or frozen)
2 tbsp olive oil or butter
3 cups fresh spinach leaves
1/2 cup cherry tomatoes, halved
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
Salt and pepper to taste
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
Cook the Tortellini:

Bring a pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside.
Prepare the Salmon:

Pat salmon fillets dry and season both sides with garlic powder, smoked paprika, salt, and pepper.
Heat 1 tbsp olive oil in a skillet over medium-high heat. Sear the salmon for 4-5 minutes on each side until golden and cooked through. Remove from the skillet and set aside.
Sauté the Vegetables:

In the same skillet, add 2 tbsp olive oil or butter and garlic. Sauté until fragrant.
Add the spinach and cook until wilted, about 2-3 minutes. Toss in cherry tomatoes and cook for another minute.
Combine the Tortellini:

Add the cooked tortellini to the skillet with the spinach and tomatoes. Toss to coat in the garlic oil and mix well. Sprinkle with Parmesan cheese and season with salt and pepper to taste.
Assemble the Dish:

Plate the tortellini and veggies in a bowl. Top with the seared salmon fillet.
Garnish with extra Parmesan or freshly cracked black pepper if desired.
