Hasselback Potatoes

Ingredients:
– Olive oil
– Salt
– Fresh parsley
– Garlic cloves
– Potatoes
– Freshly ground black pepper
– Parmesan cheese
Instructions:
1. Preheat your oven to 425°F (220°C).
2. Wash the potatoes thoroughly and dry them with a towel.
3. Place each potato between two wooden spoons or chopsticks to prevent cutting all the way through.
4. Carefully make thin slices across each potato, about a quarter-inch apart, ensuring you don’t cut all the way down.
5. Brush the potatoes with olive oil, allowing the oil to seep in between the slices.
6. Sprinkle salt and freshly ground black pepper generously over each potato.
7. Mince the garlic cloves and scatter them into the slices of the potatoes.
8. Place the potatoes on a baking sheet lined with parchment paper and bake for about 45-50 minutes or until they’re crispy on the outside and tender on the inside.
9. In the final 10 minutes of baking, sprinkle the grated Parmesan cheese on top so it melts and forms a delicious crust.
10. Once out of the oven, garnish with freshly chopped parsley for a pop of color and serve warm.
