Homemade Sausage

  1. Ingredients:
    1 pound pork shoulder or ground pork.
    1 tablespoon fresh sage, minced.
    1 tablespoon fresh thyme, minced.
    1½ teaspoons red pepper flakes.
    1½ teaspoons paprika.
    ¼ teaspoon nutmeg.
    3 garlic cloves, grated.
    1½ teaspoons brown sugar.
    1½ teaspoons coarse salt.
    1 teaspoon black pepper.
    1 tablespoon cooking oil.
    Instructions:
    If using pork shoulder: cut into 1-inch chunks and chill for 15-20 minutes, then
    grind using a medium die.
    Mix all seasonings with ground pork: herbs, spices, garlic, sugar, salt and
    pepper.
    Cook a small test patty to adjust seasoning.
    Form into 2½-3 inch patties.
    Heat oil in a skillet over medium heat. Cook patties for 3-4 minutes each side.
    Serve hot.
