Beef and Cheese Manicotti

• 12 manicotti pasta shells
• 2 tablespoons olive oil
• 1 pound ground beef
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 teaspoon crushed red pepper flakes
• 1 clove garlic, minced
• 1 (15-ounce) container ricotta cheese
• 1 cup grated mozzarella cheese
• 1/4 cup grated Parmesan cheese
• 1/4 cup fresh parsley, chopped
• 2 cups marinara sauce

1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and spread 1/2 cup of marinara sauce across the bottom.
2. Bring a large pot of salted water to a boil. Cook the manicotti shells until al dente according to the package instructions. Drain and set aside.
3. Heat olive oil in a large skillet over medium heat. Add the ground beef, salt, black pepper, crushed red pepper flakes, and minced garlic. Cook, breaking up the meat with a spoon, until browned and fully cooked. Drain any excess fat and let cool slightly.
4. In a mixing bowl, combine the ricotta, 1/2 cup of mozzarella, Parmesan cheese, parsley, and the cooled beef mixture. Mix well to create the filling.
5. Using a small spoon or piping bag, carefully fill each manicotti shell with the beef and cheese mixture.
6. Arrange the stuffed shells in the prepared baking dish. Pour the remaining marinara sauce evenly over the top and sprinkle with the remaining mozzarella cheese.
7. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
8. Let rest for 5 minutes before serving. Garnish with extra parsley, if desired.
