Southern Pinto Beans with Ground Beef

 

Ingredients 🧂

1 pound ground beef
2 cans pinto beans (or 1 pound dried, soaked overnight)
1 large onion, diced
2 carrots, diced
2 celery stalks, chopped
3 cloves garlic, minced
2 bay leaves
1 can diced tomatoes
4 cups beef broth
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon dried thyme
Salt and pepper to taste
Fresh parsley for garnish

Directions 📝

Brown ground beef in large pot, drain excess fat.
Add onions, carrots, celery, and garlic. Cook until softened.
Stir in beans, tomatoes, broth, and seasonings.
Bring to boil, reduce heat and simmer 45 minutes.
Remove bay leaves before serving.
Adjust seasoning to taste.
Garnish with fresh parsley.
