Dublin Coddle with Sausage and Potatoes ππ₯

Ingredients:
4 Irish sausages (or your favorite sausage)
6 medium potatoes, peeled and sliced into thick rounds
1 large onion, sliced
2 cloves garlic, minced
4 cups chicken broth
2 tsp dried thyme
2 bay leaves
Salt and pepper to taste
2 tbsp olive oil
1/2 cup chopped fresh parsley (for garnish)
1 tbsp butter (optional)
Instructions:
Brown the Sausages:
In a large pot or Dutch oven, heat olive oil over medium heat.
Add the sausages and cook, turning occasionally, until browned on all sides (about 5-7 minutes). Remove the sausages from the pot and set aside.
Prepare the Vegetables:
In the same pot, add the sliced onions and minced garlic. Cook for 2-3 minutes, stirring occasionally, until softened.
Add the sliced potatoes and cook for another 3-4 minutes, stirring occasionally.
Add Broth & Seasonings:
Pour in the chicken broth, then stir in thyme, bay leaves, salt, and pepper. Bring to a simmer.
Cut the sausages into large chunks and add them back into the pot, making sure they’re nestled into the liquid.
Simmer the Coddle:
Reduce the heat to low, cover, and simmer for 45-60 minutes, or until the potatoes are tender and the sausages are cooked through. Stir occasionally, making sure the broth doesnβt evaporate too muchβadd a bit more water or broth if necessary.
Finish & Serve:
If you prefer a richer flavor, add a tablespoon of butter before serving.
Garnish with freshly chopped parsley.
Serve hot with a slice of hearty bread for dipping into the savory broth.
