Citrus Herb Salmon with Grilled Asparagus

Ingredients
For the Salmon:
4 salmon fillets (6 oz each)
2 tablespoons olive oil
Zest and juice of 1 lemon
2 teaspoons orange zest (optional)
3 garlic cloves, minced
1 teaspoon fresh thyme leaves
1 teaspoon fresh rosemary, chopped
1 teaspoon fresh parsley, chopped
Salt and pepper, to taste
For the Asparagus:
1 lb (450g) fresh asparagus, ends trimmed
2 tablespoons olive oil
1 garlic clove, minced
Salt and pepper, to taste
Lemon wedges, for garnish
Instructions
1. Prepare the Marinade for the Salmon:
In a small bowl, combine olive oil, lemon zest, lemon juice, orange zest (if using), minced garlic, thyme, rosemary, parsley, salt, and pepper. Mix well.
Place the salmon fillets in a shallow dish and pour the marinade over them.
Cover and refrigerate for at least 20-30 minutes to allow the flavors to infuse.
2. Prepare the Asparagus:
Toss the trimmed asparagus with olive oil, minced garlic, salt, and pepper in a bowl. Set aside.
3. Grill the Salmon:
Preheat your grill or grill pan over medium-high heat.
Lightly oil the grill grates or pan to prevent sticking.
Place the salmon fillets skin-side down and cook for 4-5 minutes per side, or until the flesh is opaque and flakes easily with a fork.
Remove the salmon from the grill and let it rest for a couple of minutes.
4. Grill the Asparagus:
Place the prepared asparagus on the grill and cook for 3-4 minutes, turning occasionally, until they are tender with light grill marks.
5. Serve:
Plate the salmon fillets with the grilled asparagus.
Garnish with lemon wedges for an extra citrus kick.
