Chipotle Lime Keto Chicken Salad

 

A zesty and creamy keto-friendly salad with smoky chipotle flavors, fresh veggies, and tender chicken. Perfect for a low-carb lunch or dinner!

Ingredients

For the Chicken:

1 lb chicken breasts
1 tsp chipotle chili powder
1 tsp cumin
½ tsp smoked paprika
½ tsp garlic powder
Salt and pepper, to taste
2 tbsp olive oil

For the Salad:

6 cups mixed salad greens
½ cup cherry tomatoes, halved
1 avocado, diced
¼ cup red onion, thinly sliced
¼ cup cheddar cheese, shredded
¼ cup fresh cilantro, chopped

For the Dressing:

2 chipotle peppers in adobo sauce, minced
3 tbsp lime juice
½ cup mayonnaise
1 clove garlic, minced
Salt and pepper, to taste
2 tbsp olive oil

Instructions

1. Prepare the Chicken:

In a small bowl, mix chipotle chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
Rub the seasoning mix onto both sides of the chicken breasts.
Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the chicken for 6–8 minutes per side, or until fully cooked.
Remove from heat, let rest for 5 minutes, and slice or shred as desired.

2. Make the Dressing:

In a mixing bowl, whisk together the minced chipotle peppers, lime juice, mayonnaise, minced garlic, olive oil, salt, and pepper until smooth and creamy.
3. Assemble the Salad:
In a large salad bowl, combine the mixed greens, cherry tomatoes, avocado, red onion, cheddar cheese, and fresh cilantro.
Add the cooked chicken on top.

4. Dress and Serve:

Drizzle the chipotle lime dressing over the salad and toss gently to combine.
Serve immediately and enjoy!
