Cinnamon Roll French Toast Roll-Ups
Ingredients:
For the filling:
4 oz cream cheese, softened
2 tablespoons powdered sugar
1/2 teaspoon vanilla extract
For the roll-ups:
8 slices of white or brioche bread (crusts removed)
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
For the egg mixture:
2 large eggs
1/4 cup milk
1/2 teaspoon vanilla extract
For frying:
2 tablespoons unsalted butter
For topping:
1/4 cup powdered sugar
Optional: maple syrup for drizzling
Directions:
Prepare the filling: In a small bowl, mix the cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
Prepare the bread: Flatten each slice of bread with a rolling pin until thin and pliable. Spread a thin layer of the cream cheese filling on one side of each slice, then roll tightly into a cylinder.
Mix the cinnamon sugar: In a shallow dish, mix the granulated sugar and cinnamon. Set aside.
Prepare the egg mixture: In another shallow dish, whisk together the eggs, milk, and vanilla extract.
Coat the roll-ups: Dip each roll-up into the egg mixture, ensuring it’s fully coated, then place it seam-side down on a plate.
Cook the roll-ups: Heat the butter in a large skillet over medium heat. Fry the roll-ups in batches, seam-side down first, for about 1-2 minutes per side or until golden brown and crispy.
Add the cinnamon sugar: While still warm, roll each cooked roll-up in the cinnamon sugar mixture to coat.
Serve: Dust the roll-ups with powdered sugar and serve with maple syrup on the side for dipping. Enjoy warm!
