Roasted Chicken with Tomatoes and Potatoes
Ingredients:
* 1 whole chicken, cut into pieces
* 1 tablespoon olive oil
* 1 teaspoon paprika
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 1 pound potatoes, cut into cubes
* 1 pound cherry tomatoes
* 1 onion, chopped
* 2 cloves garlic, minced
* 1 cup chicken broth
* 1/4 cup vinegar
* Fresh thyme for garnish
Instructions:
* Preheat oven: Preheat oven to 400°F (200°C).
* Season chicken: In a large bowl, toss chicken pieces with olive oil, paprika, salt, and pepper.
* Assemble dish: Place chicken pieces in a roasting pan. Add potatoes, tomatoes, onion, and garlic around the chicken.
* Pour sauce: Pour chicken broth and vinegar over the ingredients.
* Roast: Cover the pan with foil and roast for 30 minutes. Remove foil and roast for an additional 15 minutes, or until chicken is cooked through and vegetables are tender.
* Garnish: Garnish with fresh thyme.
