Grilled Fish with Crispy Fries

 

Ingredients:

For the Fish:

4 white fish fillets (e.g., cod, tilapia, or halibut)
3 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp dried oregano
Salt and black pepper to taste
For the Fries:

4 medium potatoes, cut into thin strips
2 tbsp vegetable oil
1 tsp garlic powder
½ tsp paprika
Salt to taste

Directions:

Prepare the Marinade for Fish: In a bowl, whisk together olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, and pepper. Brush the mixture generously over both sides of the fish fillets. Cover and let marinate in the fridge for 20 minutes.
Preheat the Grill: Heat the grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
Grill the Fish: Place the fish fillets on the grill and cook for 3-4 minutes per side, or until the fish is opaque and flakes easily with a fork. Remove from the grill and set aside.
Prepare the Fries: Preheat the oven to 425°F (220°C). Toss the potato strips with vegetable oil, garlic powder, paprika, and salt. Spread them out evenly on a baking sheet.
Bake the Fries: Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
Serve: Arrange the grilled fish alongside the crispy fries. Garnish with fresh parsley or lemon wedges, if desired.
