Bok Choy and Mushroom Stir Fry

Ingredients:
2 tablespoons sesame oil
4 cups bok choy, washed and sliced
2 cups assorted mushrooms, such as shiitake or cremini, sliced
1 red bell pepper, thinly sliced
3 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon sugar
1 tablespoon cornstarch mixed with 2 tablespoons water
Sesame seeds for garnish
Green onions, sliced for garnish
Directions:
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the mushrooms and bell pepper, stir-frying until they begin to soften, about 3-4 minutes.
Add the bok choy, garlic, and ginger to the skillet. Continue to stir-fry until the bok choy is wilted and the garlic is fragrant, about 2 minutes.
Stir in the soy sauce, oyster sauce, and sugar, mixing well to coat the vegetables.
Pour in the cornstarch mixture and stir until the sauce thickens and becomes glossy, about 1 minute.
Serve the stir fry immediately, garnished with sesame seeds and green onions. This vibrant stir fry offers a tasty combination of textures and flavors, perfect for a quick and healthy meal.
