Banana Cream Cheesecake Bars
Ingredients:
– 2 cups graham cracker crumbs
– 1/2 cup melted butter
– 3 ripe bananas
– 2 packages (8 ounces each) cream cheese, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 cup heavy whipping cream
– 1/4 cup powdered sugar
– Banana slices and whipped cream, for garnish
Directions:
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper.
2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.
3. In a large bowl, mash the bananas until smooth. Add the softened cream cheese and granulated sugar, and beat until creamy and well combined.
4. Add the eggs and vanilla extract, and beat until smooth.
5. Pour the cream cheese mixture over the graham cracker crust, spreading it evenly.
6. Bake in the preheated oven for 25-30 minutes, or until the center is set. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.
7. In a medium bowl, whip the heavy cream and powdered sugar until stiff peaks form.
8. Spread the whipped cream over the chilled cheesecake bars.
9. Garnish with banana slices and additional whipped cream, if desired. Cut into bars and serve.
