Ingredients:
1 cup cooked ham, finely chopped
1 cup grated Gruyère cheese (or your favorite melting cheese)
1/4 cup all-purpose flour
1/4 cup butter
2 cups milk
1/4 teaspoon nutmeg
Salt and pepper to taste
2 large eggs, beaten
1 cup breadcrumbs
Vegetable oil, for frying
Directions:
1. Make the béchamel: Melt butter in a saucepan. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Simmer until thickened, stirring constantly. Stir in nutmeg, salt, and pepper.
2. Remove from heat and stir in ham and cheese. Let cool slightly.
3. Shape the mixture into small oval croquettes.
4. Dip each croquette in beaten egg, then roll in breadcrumbs.
5. Heat oil in a large skillet over medium heat. Fry croquettes until golden brown and crispy, about 3-4 minutes per side.
6. Drain on paper towels and serve immediately.
