Ingredients:
– Olive oil
– Garlic cloves
– Fresh herbs (like parsley and basil)
– Bell peppers
– Cherry tomatoes
– Cheddar cheese
– Quinoa
– Black beans
– Jalapeños
– Lime
– Cumin
– Salt and pepper

Instructions:
1. Begin by rinsing the quinoa under cold water. In a medium pot, combine the quinoa with 2 cups of water and a pinch of salt. Bring it to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy.

2. While the quinoa cooks, heat a splash of olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

3. Chop the bell peppers and add them to the skillet. Cook for about 5 minutes until they are tender.
