Oatmeal Cranberry Cookies
Ingredients:
1 cup brown sugar
1/2 cup granulated sugar
1 cup unsalted butter, room temperature
2 eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
3 cups old-fashioned oats
1 cup fresh cranberries, quartered
1 cup white chocolate chips
1 cup pecans, chopped
1 tsp ground cinnamon
1/2 tsp salt
Directions:
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, cream together the room-temperature butter, brown sugar, and granulated sugar until the mixture is smooth and creamy.
3. Add the eggs one at a time, making sure to beat well after each addition. Then, mix in the vanilla extract.
4. In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt until well combined.
5. Gradually incorporate the dry ingredients into the wet mixture, stirring until everything is fully blended.
6. Fold in the old-fashioned oats, quartered cranberries, chopped pecans, and white chocolate chips until evenly distributed throughout the dough.
7. Using a tablespoon, drop rounded mounds of dough onto an ungreased cookie sheet, ensuring to leave about 2 inches of space between each mound.
8. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges turn golden brown.
9. Remove the cookies from the oven and allow them to cool on a cooling rack before serving.
Storage: Store the cookies in an airtight container at room temperature for up to one week or refrigerate for up to two weeks.
