Cilantro Lime Noodles
Ingredients:
12 oz (340g) rice noodles or linguine
1/4 cup fresh lime juice
Zest of 1 lime
1/4 cup soy sauce
2 tablespoons olive oil
2 teaspoons sesame oil
1 tablespoon honey or maple syrup (optional for sweetness)
1 cup fresh cilantro, chopped
3 garlic cloves, minced
1/2 teaspoon chili flakes (adjust to taste)
1/4 cup green onions, chopped
Salt and pepper to taste
Optional toppings: toasted sesame seeds, crushed peanuts, or a drizzle of sriracha
Directions:
Cook the noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
In a small bowl, whisk together lime juice, lime zest, soy sauce, olive oil, sesame oil, honey (if using), and a pinch of salt. Adjust seasoning as needed.
Heat a large skillet over medium heat and add the garlic. Sauté for about 1 minute until fragrant.
Add the cooked noodles to the skillet, followed by the sauce. Toss well to combine and coat the noodles evenly.
Stir in the chopped cilantro, green onions, and chili flakes. Toss for 1-2 minutes to warm through.
Serve immediately with optional toppings like sesame seeds, peanuts, or sriracha for extra flavor.
