SMOKED SAUSAGE AND POTATOES SKILLET

INGREDIENTS
1 pound smoked sausage, sliced into ¼-inch rounds
4 medium potatoes, diced (russet or Yukon gold work well)
1 medium onion, sliced
1 red bell pepper, sliced (optional)
3 tablespoons olive oil (divided)
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon dried thyme
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
INSTRUCTIONS
1. Prep the Potatoes:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced potatoes and cook, stirring occasionally, for 10-12 minutes until they begin to soften and turn golden. Season with salt, pepper, and half of the garlic powder. Remove from the skillet and set aside.
2. Cook the Sausage:
In the same skillet, add the sliced smoked sausage. Cook for 5-6 minutes until browned on both sides. Remove and set aside with the potatoes.
3. Sauté the Vegetables:
Add the remaining tablespoon of olive oil to the skillet. Toss in the onions and bell pepper (if using). Sauté for 4-5 minutes until softened.
4. Combine and Finish:
Return the potatoes and sausage to the skillet. Add the smoked paprika, thyme, and remaining garlic powder. Toss everything together and cook for an additional 5 minutes, allowing the flavors to meld.
5. Garnish and Serve:
Sprinkle with fresh parsley before serving. Enjoy warm as a standalone dish or pair with a fresh green salad.
