INGREDIENTS
For the Beef Marinade:
1 pound beef sirloin or flank steak, thinly sliced against the grain
1 tablespoon soy sauce
1 tablespoon cornstarch
1 teaspoon sesame oil
1 teaspoon rice vinegar
For the Stir Fry:
2 tablespoons vegetable oil
2 medium onions, sliced
2 cloves garlic, minced
1 tablespoon grated ginger
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon hoisin sauce (optional)
1/4 cup beef broth or water
1/2 teaspoon sugar
1/4 teaspoon white pepper (optional)
1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)
2 green onions, chopped (for garnish)
INSTRUCTIONS
1. Marinate the Beef:
In a bowl, combine soy sauce, cornstarch, sesame oil, and rice vinegar. Add the beef slices, toss to coat, and let marinate for at least 15 minutes.
2. Prepare the Sauce:
In a small bowl, mix soy sauce, oyster sauce, hoisin sauce (if using), beef broth, sugar, and white pepper. Set aside.
3. Cook the Beef:
Heat 1 tablespoon of vegetable oil in a wok or large skillet over high heat. Add the marinated beef and stir-fry for 2-3 minutes until browned but not fully cooked. Remove from the pan and set aside.
4. Stir Fry the Onions:
Add the remaining tablespoon of oil to the wok. Add the sliced onions and stir-fry for 2-3 minutes until softened and slightly caramelized. Add garlic and ginger, and cook for another 30 seconds until fragrant.
5. Combine and Sauce:
Return the beef to the wok. Pour in the prepared sauce and toss to coat everything evenly.
Stir in the cornstarch slurry to thicken the sauce. Cook for another 1-2 minutes until the sauce is glossy and the beef is fully cooked.
6. Serve:
Garnish with chopped green onions and serve hot with steamed rice or noodles.
