Stir Fried Eggplant with minced meat
Ingredients :
2 eggplants, sliced lengthwise, fried 100 gr minced meat
2 cloves chopped garlic
1/2 onion roughly chopped
1 stalk of sliced spring onion
1 tbsp oyster sauce
2 tbsp soy sauce
1 tbsp sweet soy sauce
1 tbsp fish sauce
Salt, pepper
1 tsp sesame oil
How to :
1. Saute the bawput until fragrant, add the onion and stir-fry briefly
2. Add the meat, once cooked add the seasoning.
Pour in a little water, add spring onions and sesame oil
3. Add eggplant, stir well. Serve.
Tips:
To maintain the beautiful purple color of the eggplant, soak it in vinegar water + salt for 15 minutes before frying
