White Chocolate Buns with Almonds

Ingredients
For the Dough:
3 1/4 cups (410g) all-purpose flour
1/4 cup (50g) granulated sugar
1/2 teaspoon salt
2 1/4 teaspoons (1 packet) instant yeast
1/2 cup (120ml) warm milk (110°F/43°C)
1/4 cup (60ml) warm water (110°F/43°C)
2 large eggs, room temperature
1/4 cup (60g) unsalted butter, softened
For the Filling:
1 cup (170g) white chocolate, chopped or chips
1/2 cup (50g) sliced almonds
For the Topping:
1/4 cup (60g) melted butter
2 tablespoons (15g) sliced almonds
2 tablespoons (25g) granulated sugar
Optional: Drizzle of melted white chocolate
Instructions
Step 1: Prepare the Dough
In a small bowl, mix warm milk, water, and yeast. Let sit for 5 minutes until foamy.
In a large mixing bowl or stand mixer bowl, combine the flour, sugar, and salt.
Add the yeast mixture, eggs, and softened butter. Knead for 8–10 minutes by hand or 5–6 minutes with a stand mixer until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 1–1.5 hours, or until doubled in size.
Step 2: Shape and Fill the Buns
Punch down the dough and divide it into 12–15 pieces.
Flatten each piece into a small circle and place a few pieces of white chocolate and a sprinkle of sliced almonds in the center.
Pinch the edges to seal and shape into a ball. Place seam-side down on a parchment-lined baking sheet.
Cover with a towel and let rise for another 30–40 minutes.
Step 3: Bake the Buns
Preheat your oven to 375°F (190°C).
Brush the tops of the buns lightly with milk or an egg wash for a shiny finish.
Bake for 12–15 minutes, or until golden brown.
Step 4: Add the Topping
While the buns are still warm, brush them with melted butter.
Sprinkle the tops with sugar and extra sliced almonds.
