beef and celery stir fry recipe

Ingredients:

1 pound flank steak, thinly sliced against the grain
2 stalks celery, thinly sliced diagonally
2-3 cloves garlic, minced
1-inch piece ginger, minced
1-2 red chili peppers, sliced (optional)
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon oyster sauce
1 tablespoon vegetable oil
Salt and pepper to taste
Celery leaves for garnish (optional)
Cooked rice or noodles for serving

Procedure

1. Marinate the beef:
In a bowl, combine the soy sauce, sesame oil, garlic, ginger, and a good grinding of black pepper. Add the sliced beef and toss to coat. Let it marinate for at least 15 minutes.

2. Prep the celery:
Trim the ends of the celery stalks and remove any strings. Slice the celery diagonally into thin pieces.

3. Heat a wok or large frying pan:
Over high heat, add the vegetable oil.

4. Stir-fry the beef:
Once the oil is smoking, add the marinated beef and stir-fry for 2-3 minutes until the beef is browned on all sides and cooked through. Remove the beef from the pan and set it aside.

5. Cook the celery:
Add the sliced celery and chili peppers (if using) to the pan. Stir-fry for 2 minutes until the celery has softened slightly but still has a bit of crunch.

6. Combine and finish:
Return the beef to the pan and add the oyster sauce. Stir-fry for another minute to combine everything and heat through.

7. Serve:
Serve the stir-fry immediately over cooked rice or noodles. Garnish with celery leaves, if desired.
