Ingredients:

1 lb smoked Polish sausage, sliced into rounds
4 large russet potatoes, thinly sliced
1 large onion, thinly sliced
3 tbsp olive oil or butter
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp dried thyme
Salt and black pepper, to taste

Fresh parsley, chopped
Hot sauce, for serving
Instructions:
1. Prep the Ingredients:
Wash and thinly slice the potatoes (leave the skin on for a rustic feel or peel if preferred).
Slice the onion and sausage into rounds.
2. Cook the Sausage:
Heat 1 tbsp olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned and slightly crispy, about 4-5 minutes. Remove and set aside.
3. Fry the Potatoes and Onions:
Add the remaining 2 tbsp olive oil to the skillet. Add the sliced potatoes and season with smoked paprika, garlic powder, thyme, salt, and pepper.
Cook for 10-12 minutes, flipping occasionally, until the potatoes are golden and tender. Add the onions halfway through cooking and sauté until soft and caramelized.
4. Combine:
Return the browned sausage to the skillet with the potatoes and onions. Toss everything together and cook for an additional 2-3 minutes, allowing the flavors to meld.
5. Serve:
Transfer to a serving dish, garnish with fresh parsley, and serve hot. Add a drizzle of hot sauce for a spicy kick!
